BISTRO STYLE FILET MIGNON

Ingredients

  • 2 TBSP Butter

    3 cloves Garlic, minced

    3lbs. Filet Mignon, about 4 steaks, 1 1/4th” thick

    2 tsp Garlic Avocado Oil/ Avocado Oil/ EVOO (your choice of oil)

    1 1/2 tsp Gourmet Salt or Sea Salt+1 tsp Black Pepper OR 2 tsp Salt Steak

     Seasoning of your choice

Directions

Pat steaks dry with paper towels to ensure a professional sear. In a small bowl, mix gourmet salt/sea salt + pepper or salt steak seasoning. Immediately before cooking, season both sides of steaks with salt and pepper mixture.

Heat Oil over medium-high heat in a cast iron pan until hot over medium-high heat until oil is shimmering and just about to smoke. Place steaks in the pan and sear first side for 3 minutes then flip and cook the other side for 2 minutes. Use tongs to sear all edges for about 1 minute total.

Reduce heat to medium, add butter and garlic to pan. Once butter is foaming, use a large spoon to pour over steaks for final 1-2 minutes of cooking. Using an instant-read thermometer, check internal temperature. Remove steaks from pan when 10 degrees under desired temperature.

 

Medium Rare: 130 degrees F, remove at 120

Medium: 140 degrees F, remove at 130

Medium Well: 150 degrees F, remove at 140

Well Done: 160 degrees F, remove at 150
